Ice Cream Cookie Sandwiches

Good morning to you.  How are you all doing today?

Welcome to the last day of June.  Where did the time go?  I want to take a quick minute to wish my dad a very Happy Birthday in heaven.  He would have been 71 today.  Its crazy that I haven’t been able to see or talk to him in 23 years, but I know my dad is with me.  Hi Daddy!

In honor of my dad, I want to share a quick and easy treat with you all today.  Ice Cream Cookie Sandwiches!

We all remember hearing the ice cream truck coming around.  And always at dinner time.  Why is that??  And mom saying “NO!”  So sad. 

And then I grew up, and if I wanted ice cream at dinner time, I was gonna have it.  There was just a little issue with this.  My allergies.  And the fact that cow milk ice cream was not my favorite.  Growing up people always thought I was weird because I did not like ice cream.  Turns out, I just didn’t like cow milk ice cream.  Once I found coconut milk ice cream, all bets were off.

All we need are some cookies, ice cream and patience.  You will be rewarded!

Scoop the cookie dough bigger than you would for regular cookies

Let them cool completely

Once cooled, scoop your favorite ice cream flavor onto the cookies

How good does that look?

Ice Cream Cookie Sandwiches

Make the cookies according to the directions.  

Scoop your cookies larger than you normally would.  We want big Ice Cream Sandwiches.

Let cool completely.

While cookies are cooling, take the ice cream out of the freezer, so that it will be easier to scoop.

Scoop ice cream onto cooled cookie, top with second cookie.  Wrap in foil or parchment and place into freezer.

Freeze 1 hour before eating.
