Chicken Satay Skewers

Hello!  How are you doing today?

Do you have plans for this week?  I feel like the summer is going by so fast!

It has been over 90′ in NYC the last few weeks.  We get a break here and there in the upper 80’s, but summer is definitely in full swing.  How have you been keeping cool?  

Mr. Table and I have been spending time at our camper in the mountains on the weekends, and let me tell you, summer is in full swing there as well.  It was actually hotter in the Poconos than in the city last weekend.  I think it was the first time in a while where we could not wait to get home.

Have you been out to visit anyone yet?  We are seeing some people, but still only outside.  I think thats one of the reasons why I love the campground so much.  Being outside is the main goal of camping.  And I love it!

Since it has been so hot, I have been doing more cooking on the grill.  But some days, it is even too hot to cook outside.  That is what happened when I came up with these absolutely delicious Chicken Satay Skewers.

I had a choice, grill outside, or use my grill pan on the stove.  Ladies and gents, I’m not going to lie to you.  I chose to stay inside, and cook in the air conditioning.  Don’t worry, these Chicken Satay Skewers came out perfect!

Mix well to marinate

Remember to soak the wooden skewers to prevent burning

Pull the chicken to the back of the skewer

Repeat with remaining chicken and skewers

Chicken Satay Skewers

  • 2 lbs chicken breast, sliced thinly
  • 1 1/2 cups PeaNOT Sauce
  • Wooden Skewers, soaked in water to prevent burning

Clean and slice your chicken breast into thin strips.

Mix the sliced chicken in a large bowl with the PeaNOT Sauce.  Cover and marinate 2 hours.

Carefully weave the thinly sliced chicken onto the soaked skewers.

Grill on each side 7-10 minutes, until the chicken is cooked through.
