Good morning to you all. I hope you had a restful weekend so far. And that you were able to take some time for you.
Do you cook a full meal everyday? There are some days when I just don’t want to be in the kitchen any more. Some days I spend hours happily testing recipes, and being elbow deep in soap suds in the sink. Other days, if I have to look at another pot or oven tray, I might just scream. And that is where this Broccoli over Lentil Pasta comes in. We have a one bowl meal. We get veggies and protein all from plants. Its filling and delicious. A win win in my book.




Broccoli over Lentil Pasta
- Broccoli
- 6 cloves garlic
- 1/2 cup olive oil
- 2 tsp Seasoned Salt Mix
- 1 tsp garlic powder
- 1 tsp parsley
- Your favorite gluten free Lentil Pasta, we used @TraderJoes
Cook the pasta according to package directions. Save 1 cup of pasta water before draining.
Add all ingredient for garlic sauce to a small sauce pan. Cook on low, to not burn the garlic. (If you do, you will have to start over.) Once the garlic is brown and the oil is very fragrant, add in the reserved pasta water. Bring to a boil, then you can cover and turn off.
Cook broccoli. If you are really pressed for time, you can boil it with the pasta, but cooking separate will give you the most and best flavor.
Spoon pasta into your bowl, add some garlic sauce to the pasta, top with broccoli.

We have learned over the years that it is best to not put anything on gluten free pasta until you eat it. It really does absorb any liquids. We store any leftover pasta dry in a zip top bag, and add any topping when we heat it.
