Its Friday, the day before a holiday, and my 1st wedding anniversary. Oh happy day! ❣
Do you have plans for tomorrow? We will be staying home. I’m sure we will have some friends stop by. I am doing better with being around people outside. I am still not comfortable being inside with groups of people.
I have been trying to only go to the grocery store once a week here in NYC. When we go to the mountains, I am not so anxious. I guess its because there are a lot less people. And less people being rude too. I just overall feel better out of the city. Looking forward to the day we move away from here.
If you have people over tomorrow, or if you go to a BBQ, what will you cook or bring with you? I know most people look for potato salad at a BBQ. This Batata and Sweet Potato can be served hot or at room temperature. You do not need to worry about mayo going bad in the heat. And most importantly, it is super delicious.
We had this Batata and Sweet Potato with grilled sausages for dinner the other night. It was one of the most satisfying meals we have had in a while. Simple, nutritious, and quick. My kind of meal!





Batata and Sweet Potato
- 1 large sweet potato, chopped
- 1 large batata, chopped
- 1 medium vidalia onion, chopped
- 1 medium red onion, chopped
- 3-4 Tbsp olive oil
- 1 Tbsp Seasoned Salt Mix, to taste
Heat a large cast iron skillet over medium heat. Once the oil is hot, add in potato and batata. Coat well with oil. Cook 5 minutes, stirring occasionally.
Add in onions, and salt to taste. Use more oil if needed to make sure everything is coated. Mix well, cover, cook over medium heat 10 minutes. Stir potatoes well, cover and cook additional 10-12 minutes until a fork goes easily into potato and batata.
