Today I want to share with you the best Pound Cake I have ever made. Honestly.
Most pound cake recipes call for sour cream. Living and eating the way that I do, there wasn’t any kind of sour cream replacement for me for so many years. Then our grocery store started to carry yogurt made of different kinds of milk. It was always so hard to find plain, unsweetened coconut yogurt, but once I did my possibilities were endless.
Anytime I have unsweetened coconut yogurt in the house, this Yogurt Pound Cake will be on the menu.
We use coconut sugar in our house as well, so if the color of coconut sugar is bothersome to you, please use a lighter colored sugar.








Yogurt Pound Cake
- 1 cup oat flour
- 2 Tbsp coconut flour
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 cup coconut sugar
- 1/2 cup shortening
- 3 eggs
- 3/4 cup unsweetened coconut yogurt
Preheat the oven to 375’F. Generously grease a loaf pan.
Mix oat flour, coconut flour salt and soda, set aside.
In a large bowl, cream sugar and shortening together. Add eggs in one at a time.
Add dry ingredients on top of wet, fold to mix in.
Lastly add in yogurt, fold to combine.
Pour batter into greased loaf pan. Bake uncovered 50-60 minutes, until a toothpick inserted in the center comes out clean.
Cool completely in pan before turning out onto a board to slice.
