What I have been eating

Hey.  How is everyone today?  I pray that you are doing well.

Having multiple food allergies, people ask me all the time “What do  you eat?”  Lots of things.  Like really, I mean a lot.  

Most recently I have removed all seafood, meat and poultry from my diet.  Being vegetarian the past few months has been a bit of a challenge.  When you are used to eating a certain way, protein, veggie, veggie, salad, it can be a bit of a challenge to figure out what to fill in that protein space.

I have been experimenting with lentils to fill that protein need, and have shared with you all Vegan Chili, Vegetarian Meatballs, Red Lentil Taco Stuffed Sweet Potato, and Broccoli over Lentil Pasta just to name a few.

Also, I have tried to cook familiar vegetables in a “new” way like with my Zucchini Cutlets.  Changing your mind set on what and how you eat foods really can make all the difference.  You can click on any of the photos for the recipe.

Of course there are certain things I miss, like Oven Baked RibsEggs and Ribs and Baby Back Ribs on the BBQ.  Are you seeing a pattern here?  But when you can actually see and feel a difference in how you feel, look and the amount of energy you have, its a no brainer.  I will continue to eat this way until my body says otherwise.

When I created Ange’s Table, it was with the utmost hope that I would be able to help just one person that has food challenges, like I do. As you can see, even though I am restricted in what I can eat, I still have a vast variety of foods and methods of preparation for them.
