I pray you slept well, and are ready to take this week head on.
Today I want to talk about breakfast. Chorizo Egg and Cheese to be exact. Now I know, not everyone can have cheese. I can only have certain types. But there are times when you just need to have cheese in a dish.





Chorizo Eggs and Cheese
- 1/2 lb Chorizo
- 2 Tbsp olive oil
- 2 Tbsp shredded swiss cheese, or dairy free alternative
- 4 large eggs
- 1/4 cup oat milk
- 1/2 tsp seasoned salt mix
In a medium bowl, whisk eggs, milk and salt mix.
Fry the chorizo in oil in a large pan. When no longer pink, add in whisked eggs. Stir from the edges of the pan into the center a few times.
Turn the flame to low. Cover the pan, cook the eggs slowly, about 8-10 minutes. They will start to puff up.
Once it is almost cooked, add the cheese on top. Again cover, turn off the heat.
Let rest 5 minutes until the cheese has melted.
