Chorizo Egg and Cheese

Hey there.  How are you doing today? 

I pray you slept well, and are ready to take this week head on.

Today I want to talk about breakfast.  Chorizo Egg and Cheese to be exact.  Now I know, not everyone can have cheese.  I can only have certain types.  But there are times when you just need to have cheese in a dish.

Whisk the eggs and milk

Always use freshly grated cheese

Pour whisked eggs onto chorizo
cook eggs and chorizo before adding cheese chorizo and eggs
Stir from the outer edges into the center
add cheese to chorizo and eggs
Add the cheese at the very end
cook chorizo and eggs covered on low
Let the eggs rest, and the cheese melt before serving

Chorizo Eggs and Cheese

  • 1/2 lb Chorizo
  • 2 Tbsp olive oil
  • 2 Tbsp shredded swiss cheese, or dairy free alternative
  • 4 large eggs
  • 1/4 cup oat milk
  • 1/2 tsp seasoned salt mix

In a medium bowl, whisk eggs, milk and salt mix.

Fry the chorizo in oil in a large pan.  When no longer pink, add in whisked eggs.  Stir from the edges of the pan into the center a few times.  

Turn the flame to low.  Cover the pan, cook the eggs slowly, about 8-10 minutes.  They will start to puff up.

Once it is almost cooked, add the cheese on top.  Again cover, turn off the heat.

Let rest 5 minutes until the cheese has melted.
