I hope your week went by fast, and the weekend is long and relaxing.
Today I have the simplest treat for you. Whenever I melt chocolate for cookies, there is always a bit of melted chocolate left over. Sometimes I can use it for another recipe on the same day. Other times I just don’t have any more recipes that require melted chocolate. I will not throw it away. That is just wasteful. So what do I do? Make treats out of it!
This is not so much a recipe, more a guide. I had melted chocolate and a small amount of blueberry jelly left from making Blueberry Sandwich Cookies. I mixed them together, added in some coconut until all the coconut was coated, dropped spoonfuls on parchment, and set them in the fridge.




Chocolate Coconut Drops are so simple to make, and oh so satisfying to eat. They are not too sweet, and go perfect with a cup of coffee.
