Brussel Sprout Taco

Hello there.  How are you doing today?  Can you believe Christmas is only a few days away?

What are your plans for Christmas this year?  We will just be staying home.  This is the first year in I can’t even remember how long that I have to work on Christmas Eve.  That makes me sad.  

In our house we open our Christmas stockings on Christmas Eve, and I have to say I am worse than a 4 year old child.  I want the day to go by in a flash so we can open our stockings.  And there isn’t anything big or expensive in there.  Just fun little knick knacks, but it makes me happy.  I know, I’m a big doof.  Its okay, I’ve learned to embrace it over the years. 😋🎄🎅🏼 

Whether you are cooking for an army, or just your immediate family, I know this week is always a busy one.  Trying to get last minute gifts, making sure everything is wrapped and under the tree.  Or baking to have some extra treats around the house, we all need quick, healthy and delicious meals to keep us going.  

It can be a bit of a challenge when everyone in the house has different dietary needs.  What I try to do is make the “same” thing, with just one or two simple swaps.

Both pans above have all of the same ingredients.  In cooking this way, I only have to chop once.  They both start with onions, carrots and garlic.  They both have olive oil and homemade taco seasoning The important thing I try to remember is to keep it simple.  We had our Taco Night with beans and tostones.

Brussel Sprout Taco

  • 1/2 lb brussel sprouts, sliced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 small onion, diced
  • 3 Tbsp olive oil
  • 1-2 Tbsp homemade taco seasoning

Heat the olive oil in a large cast iron skillet, or heavy bottom pan.

Add in onion and carrots.  Cook 5-7 minutes until they start to soften.  Add in garlic and brussel sprouts.  Mix well.  Cook just until the garlic becomes fragrant.

Add in 1-2 Tbsp taco seasoning, depending on how spicy you like your taco.  Mix well.

Cover, cook on medium heat 10-15 minutes, until the brussel sprouts are cooked to your desired tenderness.

Serve with your favorite sides.

Cooking for the family during the week can sometimes be hard to do.  We are all busy with work, school and other commitments.  But you can have the most amazing meals, including for different dietary needs, on a Tuesday.
