It’s the start of another week. Do you have anything planned? Will you get to visit any of your friends or family this week?
I have been home mostly, and I still like being able to have dinner ready for my family when my husband gets home from work. It so nice to be able to sit down to a meal at a normal hour, and not come home after working all day, to prepare a meal that we wont be able to eat for 2 hours. Having dinner close to 8pm most week nights was the normal in our house. When you get up at 4:30am like my husband does, or even 6:05am like I used to, eating that late, then laying down for bed is never fun. I definitely have less acid reflux not eating a large meal so close to my bed time.
Even though I am not working outside of the house right now, I am still very busy with Ange’s Table. I really want to know how I was able to fit everything in.
This Asparagus Wrapped in Prosciutto sounds fancy. And hard to make. But let me let you in on a little secret, it has to be one of my most simple, easiest side dishes that I make. It has 3 ingredients, and cooks in the oven while you make the rest of your meal. Looking for a way to get more green veggies in your diet, this is the way. Anything wrapped in pork is a winner in my book!



Asparagus Wrapped in Prosciutto
- 1 bunch asparagus, washed and trimmed
- 8-10 pieces of prosciutto, cut in half
- Fresh cracked black pepper
Preheat the oven to 350’F. Line a baking tray with foil, lightly grease with olive oil.
Lay a piece of prosciutto onto your work surface. Place 6-8 pieces of asparagus on top.
Roll up the prosciutto and asparagus, placing on baking sheet seam side down.
Crack fresh black pepper over the top.
Bake in preheated oven 25-30 minutes, until the prosciutto is crispy.
